When David and I don’t feel like cooking we do easy dinners – sometimes we even do cereal for dinner (But Don’t Tell our Parents!!). The most yummiest and easiest meal ever is Buttermilk Pancakes.
Buttermilk Pancake :: Made with Real Milk!
Are you confused yet? Well I use the Buttermilk recipe but seen as how I never ever buy Buttermilk I replace it with normal milk. Even better is using Raw Milk but that is sometimes hard to find – we can buy it up on the Sunshine Coast so we are trying to source it here in Wollongong.
Recipe ::
(We double our recipes because we have so many hungry boys to feed!!)
Not sure how many this will feed!
1 1/2 Cups of Plain Flour (3 cups for us)
1 teaspoon Bi-bicarbonate of Soda (2 teaspoon)
1/4 cup raw sugar (1/2 cup)
2 eggs, separated (4 eggs)
1 cup milk (or buttermilk, or better still Raw Milk)
The Pancake Mixture ~
Almost ready to cook!
How To Make the Pancakes ::
Sift flour and bicarbonate of soda into a large bowl and stir in sugar…..or if you are in a relaxed mode lazy like we are then put all of it together in a bowl and stir with a wooden spoon!!
In a medium bowl whisk egg yolks and buttermilk milk until combined.
Add to flour and mix until smooth.
Using an electric mixer, beat egg whites until soft peaks form. We actually don’t have an electric mixer but David has good arm muscles and uses a Whisk!! (here is “How To Whisk Eggs” in detail)
Mix ¼ of the egg whites through the batter, then gently fold in remaining egg white….do this very slowly so that the pancakes are light n fluffy.
Cook Buttermilk Pancakes as per normal – or to your liking…we like them brown!
Top with berries and drizzle with honey or maple syrup….or even use Honey/Lemon/Sugar/Jam/Peanut Butter!/Ozemite or whatever takes your fancy. Sometimes we have them with Peaches and Cream (naughty but nice!!!)
