This recipe was the inspiration from Peach Keen Mumma with her very yummy Recipe – “Franks Red Hot American Buffalo Wings with Blue Cheese Dip” – OH my gosh I so wished I had tried it before!
Mind you I did change a few of the ingredients to suit what I already had in the fridge and purchased the rest from Woolworths…..
As we live and cook in our Motorhome I am challenged with finding new recipes that we all like, and that I can cook with such limited Space, we have a bench top oven but its not the best for heat!
Spicy Chicken With Blue Cheese Sauce ::
Ingredients ::
2 kilos of Chicken Wings
Cooking Spray
Hot Hot Peri Peri Sauce
Butter
Sour Cream
Egg Mayonnaise
100g Blue Cheese
Baked Veggies – Potatoes, Sweet Potatoes, Pumpkin
Beans and Corn
Method ::
1. Cut your chicken wings in half, and cut the tips off -throw those yucky tips out!! {I like to cook them without the tips}
2. Spray with Cooking Spray and Place them in the Oven. BIG TIP :: Buy cooking paper cause the chicken is a pain to clean off the Oven Tray!
3. Cook any of your Roast Veggies – we don’t have enough Oven Space so I cook them in a Fry Pan.
4. While the Chicken and Veggies are cooking you can make the Blue Cheese Sauce – I blended up 1/2 Cup of Mayonnaise, 1/2 Cup of Sour Cream and all of the Blue Cheese, but its up to your taste buds.
5. Mix in 1 heaped tablespoon of Butter with the Peri Peri Sauce and warm in a small saucepan.
6. When the Chicken Wings are Brown and Crunchy {again our Oven is not that great so I cooked them for about 5 Minutes in a Fry Pan to crisp them up} place them in a Bowl and add the Peri Peri Butter Sauce – if you have little ones like we do, then only had half of your Chicken Wings to the Spicy Sauce and leave the other half to serve without the Spicy Sauce.
7. Cut up Celery and add to a Plate to Serve up with the Dipping Sauce.
8. At the last minute cook the Beans/Corn and serve warm.
9. DIG in because this is one yummy meal, one David and I can’t wait to have again!
10. Thank the cook and then do the washing up for them as a Thank you for cooking Spicy Chicken With Blue Cheese Sauce.

Love your Step 10 Lisa. Marty always made the kids thank me for cooking their meals and he always does himself too. This is an interesting mix Lisa. The hot chicken wings and blue cheese sauce. I am going to try the blue cheese dip. Cooking in a caravan/bus is very challenging I know. I try to think of meals that can be cooked in the one pot!

I don’t mind a little spicy but I don’t want a 4 alarm fire in my mouth either. I see you used Peri Peri sauce but ironically I do have some Frank’s in the cupboard at home. OMG this looks incredibly delicious but you didn’t invite me for dinner, Lisa! Argh, now my stomach is roaring hungry! 🙂
