When my boys were little they wouldn’t freely eat vegetables so I got very creative with our meals and would hide them all in sorts of dishes. Now they are older I still like to make our meals with lots of grated veggies and still do to my secret recipes. Chicken Spaghetti Bolognaise with Gluten Free Pasta is one of my secret recipes! One I am going to share because I want everyone/all to enjoy good food that is not only tasty but delicious.
Chicken Spaghetti Bologanise With Gluten Free Pasta :
Its our favorite secret recipe, don’t tell anyone that I am sharing it!!!
Mind you we never ever used to eat Gluten Free pasta when all of our five boys were living at home with us – we didn’t realise back then how bad flour/sugar was to our way of living.
Ingredients
Chicken Mince
Bacon {optional} – from the Butcher, make sure you ask for “nitrate free bacon” – you will never ever eat Bacon from a packet once you try nitrate free!!
1 Onion
Garlic
Mushrooms
Carrots
Zucchini
Broccoli
Pasta Sauce
Pasta
Salt/Pepper/Herbs to taste
Honey
Cream
Instructions –
- Brown the onion in good quality olive oil
- Brown the Chicken meat – make sure you break it all apart so that it is cooked through.
- Cook the Optional Bacon in a another fry pan
- Add the bacon to the dish once the Chicken is cooked completely
- Brown the mushrooms
- Add any Veggies you are going to use – I grate the Carrots/Zucchini, and break down the Broccoli into very small pieces – at the end of the cooking its so not noticeable.
- Add the Jar of Pasta Sauce
- Add Salt/Pepper to taste
- Add any herbs you want to use – Italian Herbs, Rosemary, Oregano, Thyme – anything you want to add for yummy flavour.
- Add the minced garlic – I add about 4-5 cloves of garlic!!
- Add 1 tablespoon of honey – it helps take away the acid taste of the Jar of Pasta Sauce
- When the Chicken Mince and Veggies are cooked {all soft} then add as much cream as you like – the cream is what makes it our secret yummy recipe!
- Cook the Pasta in Boiling Water with lots of salt, in a large saucepan
- Drain the cooked Gluten Free Pasta
- Add the Chicken Spaghetti Bolognaise to the Cooked Gluten Free Pasta.
When I have added all of the Chicken Spaghetti Bolognaise with Gluten Free Pasta, I make sure its all mixed in well. Then I dish it up with either Cheese or lots of yummy Parmesan cheese.
Add extra Salt/Pepper if you so wish. Oh and it goes well with a glass of white wine but I didn’t have any the other day – I swear we didn’t have any in our motorhome fridge otherwise I would have taken a pic!
Mind you don’t give your kids the wine, don’t waste it on them!!
