Tonight we headed from our Hotel – Rendezvous Hotel – to The National Gallery of Victoria to sit in the Auditorium, to hear a talk about food…It was called “Theatre of Ideas :: In Conversation With Dan Barber“
Both David and I had no idea who Dan Barber was….so i quickly googled Dan Barber while we were waiting for it to start. Interesting history. Interesting man!
Interesting conversation and lots of information to take on board. Actually with our family way of eating – with our way of shopping {we shop with a conscious in regards to Halal Certified Free Products as well as organic as much as possible} and with healing our bodies naturally through food I knew that David was going to enjoy the evening. We don’t see a doctor, we heal naturally as much as possible.
I ended up enjoying the conversation just as much.
We eat foods that our body needs – garlic to heal and herbs to help. We are not vegetarians, but we are not big on red meat – mostly we stick with Chicken or Fish. And most nights we have vegetarian meals.
Now that we are grain free – we eat Sour Dough Bread – and sugar free – it was so interesting listening to Dan Barber. And his thoughts on how we need to make the “Connection from where the food comes from” – its all about the Farm and the farmer.
The way we eat needs to be a choice, a conscious choice and picking our food with regards to where the source comes from. Our way of looking at cooking food, eating food and nourishing our bodies is about to change – and will keep on changing world wide. Dan Barber thinks that the society is becoming to realise that we need to get back to nature!
We learnt more tonight then we thought possible….we need to make the right choices when eating – taking from the land what it produces and then making sure that we eat so the land can keep producing food that is high in nutrients, high in vitamins.

Actually I can’t put into words all that I learnt, I was wishing that I could have taken down notes!
I do know that it has proven that our eating habits/change of lifestyle is moving forward in the right direction and that our way of thinking about food is evolving, shifting and will one day be all about celebrating the very place that the food is grown from.
Dan Barber is all about “Bringing the Food from the Farm to the Table”. With his book based/called “The Third Plate”
Wished I had read my Itinerary a bit more before we turned up tonight….we were supposed to be able to meet Dan Barber in person before the conversation started…and get a signed copy of his great book. But you know what, listening to him with his passionate speech about his thoughts on how Chef’s {restaurants} are responsible for the change of how food is cooked, served and eaten was worth the trip down from the Sunshine Coast to Melbourne, let alone what we are going to experience tomorrow….
A special guest joined the stage – Michael Klausen. The creator of “Brasserie Bread” company. The person who will be changing the bread industry for ever more. I really do think that he is going to change Bread Australia Wide – State by State.
Michael also believes that you have to “Know where the wheat comes from” to be able to make Bread- that is to make the Bread should be made. He wanted to be able to bake with knowing where the quality of the grain was coming from.
He knows his farmer, he knows how the Farmer grows the grain, how the animals have a part of that process, and how the dirt is nutrients are the most important process.
After the In Conversation With Dan Barber and Michael Klausen talk finished we were all invited outside {into the foyer} to try a slice {or two} of the Brasserie Bread – and was also given a loaf of the Bread.
You have not eaten Bread until you try Brasserie Bread – actually their is no bread out there on the market that can compare. Its the only bread that we all should be eating….at the moment its only available in Sydney and Melbourne. Sure hope that soon it will be available in the Sunshine Coast area?
The air in the bread is the way bread is meant to be made, its all in the process of the yeast/raising the bread and letting the bread sit before its baked. The way they used to make bread before our lifestyles of convenience took over – before machines were inverted and food ingredients changed!
WOW if that is the beginning of our Melbourne Food and Wine Festival – I can’t wait to see what happens tomorrow!

Yeah I am trying to eat healthier and smarter…mind you this weekend has been extremely hard with all of the yummy treats on offer! We did have a great evening out tonight – well it was more of an afternoon in a wonderful old historical building, can’t wait to share pics and information 🙂
