Now that I have taken over with cooking our family meals I am on the search for easy, yummy tasting, healthy dinners that can be cooked in less than an hour and still look good! Normally David creates/makes/bakes dinners and gee is he good at coming up with something we havent tried before!
Spinach And Feta Easy Potato Bake
David used to cook this all of the time – tonight I discovered that I can cook it and it taste just as nice. Spinach And Feta Easy Potato Bake is….Potatoes Baked in our Stove Top Oven, with Spinach and Feta Mixture over the top.
Cooking the Potatoes ~
With our hungry boys I had to make more than one potato each (Plus they were small-sized!)
For someone who doesn’t like cooking and now has to cook, I like the fact that I am able to make this dish in between washing up the endless flow of dishes that are sitting on our sink, bathing the kids and trying to get them into bed at a reasonable hour! Living in a Motorhome means that Dinner times is a bit hectic 🙂
Ingredients :-
- 1 Potato per person in your family
- 2-3 onions, finely chopped up
- 2 quantities of Spinach
- Feta Cheese
- Cottage cheese
- Salt and Pepper, to taste
Place the peeled potatoes into the oven. Cook as required Slice the onions very thin. Place into a bowl.
Onion and Cheese ~
Combine in the Bowl before adding the spinach!
Drain the Spinach so that there is no water. You will need to squeeze it out – roll the 2 packets of Spinach together and squeeze till no more water is dripping out!
Combine the onion, Feta Cheese, Cottage Cheese with Salt/Pepper into a bowl. Mix until all ingredients become one. Heat up a big Fry Pan on the Stove Top. Add the Spinach Feta ingredients and cook until you see the cheese is starting to melt it altogether (about 10 minutes is all it takes!)
Cooking The Spinach Filling
Cut the Potato in half and serve with Spinach and Feta Filling! Easy Dinner in less than one hour

Looks good Lisa. Can’t wait to try. I made up a tuna and spaghetti dish last night which was really nice. The sauce was:
1 onion – chopped
1 heaped tblsp. of chopped green capsicum (pimentos because I am in Spain!)
3 cloves of garlic (because I can)
8 green olives seeded (very nice here in Spain!)
1 tin of chopped tomatoes
1 large tin of Tuna in olive oil
dried chilli, ground black pepper to taste
fresh or dried herbs (I used sage and thyme fresh from the garden) and dried
basil – dill would be good.
1/2 glass white wine
Saute onion and capsicums in olive oil till onion is cooked but still crunchy (not brown), add garlic for a few minutes. Add everything else. Cook till it looks like the right consistency. About 10 minutes. Pour over individual serves of cooked spaghetti.
IT WAS YUM! Leave out hot stuff if you do not like, but I think it does need something to lift it. If you don’t use hot stuff try serving with a squeeze of lemon or lime. Enjoy!
