The Swallowed Anchor

While I was down in Sydney {for my Diploma of Remedial Massage} I kept harassing my oldest son to take us down to The Swallowed Anchor for either Lunch or Dinner time, just so I could cross it off our bucket list! And also to support another cafe down in Wollongong.

And I am so glad I kept at him until he took us, he didn’t tell us we were going, it was a surprise! Considering it was my birthday while I was down there, and his Birthday, we could call it a late combined birthday celebration, but really it was just a great place to relax and to eat at!

Donut Boyz Wickham

If you are ever in Brisbane {for work or play} and happen to walk past The Wickham then you so need to stop in at Donut Boyz and get yourself a Donut {or two}.

We were walking past there a few months back and when David spotted what they had on display in the Donut Boyz Wickham shop front he had to buy one! And was given a taste test of so many, I am really surprised we only ended up having one.

Cooking Dinner On Our Choofer

David loves cooking. He creates meals out of the raw ingredients that could easily be added to menu’s in Restaurants, or even in a Food Van! I think he is wasting his cooking skills but we are working towards sharing them soonish. The following dish was a Creamy Mustard Vegetarian meal that was the best we have ever eaten! I think its because of the “Woody” smokey taste to the dish!

We have shared Making Dinner Outside The Motorhome before – cooking our favourite dishes and sharing them! As soon as we got our Motorhome back we all were keen to have our Choofer out of the Boot and our boys collected the wood from the paddock asap so that we could fire it up!

Gluten Free Chocolate Chip Cookies

Yesterday I had that craving that you get once a month {being a girl and all Рsorry for TMI} and I was in desperate need of a Chocolate Fix. If David was here I would have had him making our Favorite РAvocado Chocolate Coconut Mousse and if we had Avocado in the fridge I would have tried to make it myself. Instead I broke my No Sugar Rule and went for the naughty Gluten Free Chocolate Chip Cookies. And it worked! I got my fix.

Gluten Free Chocolate Chip Cookies ::

Recipe ::

125gram Butter

3/4 Cup of Organic Raw Honey {it was actually too much honey so next time I am going to try less}

1 egg

1 3/4 Cups of Gluten Free Plain Flour

2 Teaspoons of Cream of Tartar

1 Teaspoons of Bicarbonate Soda

250grams Packet Nestle Bakers Choice Choc Bits Milk

Method ::

  1. Use A Electric Mixer and beat the Butter and Honey until pale and creamy.
  2. Add egg until just combined
  3. Stir Flour, Cream of Tartar and Bicarbonate Soda together and then add to the Butter/Honey/Egg Mixture {Mix gently with a wooden spoon}
  4. Add the Choc Bits until well mixed {mix gently with a wooden spoon}
  5. Spoon onto a Baking Tray {I use Baking Paper to save on them sticking and washing up}
  6. Cook in the oven on low heat {about 150-160 Degress} for as long as needed. About 20 minutes – they are golden brown and will firm up on a Cooling Tray.
  7. Try and keep them somewhere safe – out of your reach and kids reach!!}
  8. They are the best cookies ever

Going to try them with other Ingredients to make them more healthier – Will let you know how I go – instead of Choc Bits I am going to try Passionfruit next time!

Melbourne is one of our all time favorite cities, and one we love to visit. Its a special place – its the City where our Two Oldest Son’s went to for basic Navy Training. Its the place where both boys made all of their family super proud with their Navy graduations – oh gosh do my Boys Look good in Navy Uniforms.

And its also where “World Vision” head office is – a place that is very very special to our hearts.

Yes we love Melbourne and we will always will. Even though we haven’t been there since our second son’s navy graduation we can’t wait to get back there.
