After the Friday night – listening to Dan Barber – we were both excited to be able to attend the Saturday event. It was in a vacant lot between office buildings/hotels. Turned into a “Casual Meeting Place” to learn all about cooking Mexican food. The Essentials with Paul Wilson, something we didn’t know much about but soon realised we were in the right place at the right time- so very glad that Hubby was with me because he LOVES food.
Actually David should have been a chef, the way he can whip up dishes from ingredients that we have, the way he can find a recipe and then adapt it to our Gluten and Sugar Free way of eating, the way he can find ingredients and put them together and they taste amazing. I reckon he would have been a bit like Jamie Oliver or Gordon Ramsey – not too sure on the language but do know that he would have had a successful restaurant.
Paul Wilson love of travel and food lead him to Mexico where he learnt how to use their local ingredients {and foods in season} to create dishes full of colour and flavour. And his use of the BBQ was inspirational – David is now keen to find the ingredients that Paul used {and try his recipes from the Book that was given to us} to hold a Dinner Party with friends/family! He even used a BBQ on the Balcony the other night to cook a wonderful Roast Chicken {will share that soon}
Yes we sat around on the cushions, watched some magical cooking going down and listened to how to put a Mexican dish together, and then ate some yummy food and tasted some yummy Taco Beer. What a way to spend a Saturday 🙂
The mirror was over the Kitchen Bench so that we could look up to see all of the “dishes” being put together. The BBQ grill didn’t have the same mirror so we had to either get up off our seats to see what he was doing, or listen to Paul talk about his methods. I loved watching how he put together a Salad, A Taco Meat Dish along with a Fish Dish.
David is so very keen to try his “Taco” dish as soon as possible, I am hoping that he will use Chicken instead of Red meat so that I can eat it also!
Paul was so very passionate about his Mexican Recipes, and both David and I was so very keen to get his cook book – actually David was very keen! As soon as we got back to our Hotel Room David was checking the book out, he was drooling over every recipe.
He grilled the Veggies and the garlic on the BBQ. The smells were incredible – something out of this world with how he created each dish and the spices he added, mouth watering!
I even tried the Dish {yes I tried red meat!!} and it was delicious {I paid the price later on for that but hey it was worth it}- can’t wait till David makes this dish but replacing the red meat. Mind you we are having a bit of trouble trying to find the ingredients here on the Sunshine Coast! Will keep researching till we do, maybe we will have to shop online.
I have never seen such a Cool Fridge before! Now wouldn’t that be so cool in a Motorhome – Love the Colours!
David and I can’t wait to have a “Dinner Party” – the question will be…who wants to come?
Massive thanks to Melbourne Food and Wine Festival – The Essentials With Paul Wilson was worth the trip down to Melbourne– we now have a “new life on food” and can’t wait to try all of the recipes!
Did I mention that there is a Dessert section in the book….yeah I am done for aren’t I 🙂
The Essentials With Paul Wilson was our second favorite event, after listening to Dan Barber we were not sure what to expect. All I could say is that the weekend was starting off fine, and it went from there.

I want to come, I want to come!! *raising hand higher than everyone else* That sounds like it was a blast, Lisa! I would love to go cooking demonstrations. Using the mirror is brilliant. I love Mexican food…ground beef chimichangas, cheese enchiladas and chili relleno are my favs! So, what time should I be there??
