Our favorite dishes are ones that I tend to make cause they are easy, they taste good and I am one of those cooks who are not game enough to find new recipes all of the time so I cook with what I know!
We don’t have an oven in our Bedford Motorhome so we cook mostly on the Stove Top.
Vegetarian Chilli Beans ::
I love to make Chicken Soup for The Soul – especially when its cold or when we all need a immunity booster….and my all time other favorite dish is Vegetarian Chilli Beans!
Ingredients ::
Olive Oil
2 Onions
1 Red Capsicum
1/4 tsp Chilli Flakes {or 1/2 tsp if you like it more hot!!!}
1/2 tsp ground cinnamon
1 tsp ground cumin
1 tsp ground thyme
2-3 gloves garlic, crushed
420g can mixed beans, drained and rinsed
420g can lentils, drained and rinsed {or use Chick Peas if you have no lentils, like I had to do last night!!!}
1 Large Glass Jar of Pasta Sauce
1 cup chopped Parsley
1/2 cup Peanut Butter
Enough Rice to feed your family
Method ::
- Brown the Onions with the oil – I like Caramelized Onions so I let them cook while I am cutting up everything!
- Add the Capsicum and cook till soft
- Add the Chilli and cook for about five minutes
- Add the Cinnamon, cumin and thyme cook for a about a minute
- Reduce the heat and add the garlic, beans, lentils, Pasta Sauce and any vegetables that you want to add ~ I use what ever veggies are needing to be eaten
- Cook for about five minutes
- Add Peanut Butter and cook until the Rice is cooked.
- Cooking for about 15 minutes or until thickened
- Stir through the Parsley
Serve up with Corn Chips and Salsa {I make the Salsa while the rice is cooking!}
One healthy yummy meal ready in less than an hour.

Like the idea of adding peanut butter to the meal.
I am going to tell my daughter about this one, she is a vegan and loves Mexican food. Do you substitute chick peas for lentils when you cook it?

Yummmm!!! Looks delicious!!! I think I will add this to my small repertoire of recipes! We are huge fans of pumpkin soup in our household! My daughter will not touch pumpkin any other way!
