On Sunday it was Fathers Day and I decided that David was NOT allowed to cook Breakfast, Lunch nor Dinner. We do not have an oven but for some reason {not sure why} we had an organic Chicken in the Freezer. A full Roast Chicken with no means to cook it in.
Baked Dinners Our Way ::
The last weekend David cooked a Pork Pot Roast in a Saucepan so I thought that given it was a Roast Chook that I could do the same method, just a different cut of meat from what David cooked.
Ingredients ::
1 Whole Chicken
8-10 Potatoes
Carrots
Beans
Broccoli
Method ::
Roll the Chicken in Seasoned Flour, we used Corn Flour because that is all we had in the cupboards but you could use Plain Flour or even Wholemeal Flour.
Then Brown the Chicken in a Frying Pan – turning it onto all sides to brown {Standing it up on its back and side to make sure all of its browned}
Add 1/2 a cut onion and 3 Gloves of Garlic with heaps of Butter to the inside of the Chicken
Transfer the Browned Chicken to a Saucepan, adding a little bit of water.
Cook for 1 – 1 1/2 hours….the meat is so tender that it will fall off the bone.
Brown the Potatoes in a Saucepan Cook Honey Carrots Cook Peas/Beans or Broccoli
When you take the meat out of the Saucepan the juices are ready for a Natural Home Made Gravy – if its too runny you can add more flour but because we used Corn Flour the juices were perfect as is. Enjoy! That is how we cook Baked Dinners Our Way.

What a great way to cook chicken! Sometimes you gotta do what you gotta do. And as long as it works, why not? This would be awesome for us oven people, too. Beats trying to turn on the hot thing in the middle of the summer!
